Creamy Asparagus Soup

My Grandma Virgie & Grandpa had 5 children! They were not wealthy people, raising their family in a modest 2 bedroom home in Richmond, CA.  Needless to say feeding a family of 7 must have been a daunting task.  My Grandma often quoted famous sayings, like that of Benjamin Franklin, ” A Penny Saved is a Penny Earned”, and others like “Waste Not, Want Not”. These sayings have been around for hundreds of years and still hold true for so many today.  Grandma worked hard to make ends meet and stretch the food budget; luckily my Grandpa was an avid gardener with a  lush vegetable garden in the backyard that rivaled that of any I’ve seen.   Soup is one of those meals that with a few veggies, and a little water or broth,  you can make a meal for a large family happen in no time.  Here is one of my favorite soup recipes, it is creamy, hearty and oh so good! If you like asparagus you will love this soup! It pairs well with hot ham and cheese sandwiches or ham and veggie crepes. However this soup is so hearty and satisfying, it really doesn’t need any accompaniment.                                                                                              I hope you enjoy it!  

Asparagus, Potatoes & Onion,
Veggie Broth, Chicken Broth, Heavy Cream
  1. 2 lbs Asparagus, cleaned and chopped to 1″ pieces.
  2. 1 White Onion
  3. 3 Russet Potatoes
  4. 32 oz of Chicken Broth
  5. 16 oz of veggie broth
  6. 1 Pint Heavy Cream or Half & Half
  7. Pat of Butter
  8. 2 Tbsp Olive Oil
  9. Salt & Pepper to taste
Chop all veggies and fry in pot with oil until slightly browned.
Add broths and bring to a boil, boil until vegetables are soft and smushy
Use Immersion Blender to liquify the soup once all vegetables are soft, add cream, and blend again. Bring to boil, and it's ready to serve.
