Lemon Meringue Cupcakes

The best of two worlds! Combining lemon meringue pie and lemon cupcakes to make the perfect, tart & sweet treat.

    This recipe was inspired by my little brother Eddie. I am 4 years older than him, and growing up I doted on him as any older sister would, he was my baby, my cute little blonde haired, blue eyed boy.  I was his tutor, playmate, babysitter, and sometimes cook. He was such a sweet and loving little brother, and today nothing has changed, he is an awesome man! He can make you laugh til your side hurts, sing you a song, remodel your house, paint you a masterpiece,  write his beautiful wife the most touching lyrics, and has raised 3 amazing and successful children. My Eddie Wayne is truly one in a million!

     What baby wants, baby gets! He never liked birthday cake or any cake for that matter, so we always had to make him a Birthday Pie, not quite as much fun to decorate! Anyways, his favorite was a lemon meringue pie, so one year I tried to combine a cupcake and a lemon meringue pie and this is what I came up with. I think he still prefers an actual pie, but everyone else loves them and I think he does too.  I love you Eddie Wayne, thanks for the inspiration.  

sweet and tart lemon meringue cupcake ingredients. Cake Mix, Lemons, Eggs, Jell-o, sugar, oil
Ingredients : Always use Cook & Serve Jell-O never Instant!
  1. Lemon Cake Mix
  2. Fresh lemon juice
  3. Zest of a lemon
  4. 3 Eggs for cake
  5. Oil
  6. Jell-O Cook & Serve Lemon Pudding mix
  7. 3 Eggs divided for pie filling mix
  8. Sugar
  9. Water

Roll lemon on counter pressing firmly, before cutting it, to help it release more juice
Bake at 350 for about 16 - 22 minutes. Check with toothpick if you aren't sure they're done.
Add juice of two lemons in measuring cup, then fill the rest of cup with water until it reaches 1 cup total liquid
Eggs, Oil, Lemon juice & water, lemon zest and cake mix, beat on high for about 2 minutes.
Add zest of lemon to dry ingredients and combine
I use 1/4 or 1/3 cup measuring cup to fill each cupcake liner
These didn't rise too much, but if they do, you can cut them down to be even, so the meringue doesn't slide off when done.

Prepare Pudding as directed adding lemon juice to total liquid. Reserve egg whites for meringue and last step.
Pour Pie filling in bowl to cool, putting a sheet of cling wrap on surface as to not let a "skin" develop.
Combine in non stick sauce pan, and mix well, bring to boil stirring constantly, and removing immediately after it comes to boil.
Use a grapefruit spoon to dig out small hole in cupcakes, then fill with even scoops of pie filling once cooled.

Beat egg whites and about 1/2 cup sugar until stiff peaks form
Pipe or dollop stiff meringue on top of filled cupcakes

Brown tops on high broil setting in oven for just a couple of minutes. Watch closely! Take out and let cool, keep refrigerated until ready to serve or put out for a few hours if the weather is cool. Enjoy!
