Coleslaw & Hushpuppies

    This post is more than just a delicious recipe to share, it is also a little life lesson, one I’ve learned as I have watched my husband  over the past 30 years continue and cultivate his passion for fishing. Creating memories and teaching so much to our kids about life, while enjoying himself, and staying connected to nature and his past. I now understand why he loves it so much, it’s not just for the fish fry at the end; although that is always a great bonus!
     If you’re gonna have a fish fry, then you gotta have sides, and two of my favorites are Coleslaw and Hushpuppies. Here are my recipes, hope you enjoy! and hope you catch a big one! 

Coleslaw Recipe

  • 1 Head Cabbage
  • 1 White Onion
  • 3 Carrots
  •  Parsley (Curly Leaf)
  • 3/4 Cup Mayonnaise
  • 2 Tbsp Lemon Juice
  • 1 1/2 Tbsp Vinegar (Apple Cider) 
  • 3 Tbsp Sugar
  • Salt & Pepper to taste
  • Dash of Onion Salt (Optional)
  • 2 Tbsp Dijon Mustard (Optional)
Chop whole head of cabbage into small bits, chop onion into small pieces, use less or more of the onion as to your taste, Grate carrots, and chop a hand full of parsley. Put all ingredients in large mixing bowl and start on your dressing.
Combine, Mayo, Sugar, Vinegar, Lemon Juice, Salt & Pepper and mix well or blend in mini food processor
Combine all ingredients and mix well, put in serving bowl, cover with plastic wrap and refrigerate for a couple of hours .

Take 'em fishing

Give a man a fish…..blah, blah, blah…  You know you’ve heard it, but have you every really thought about it? When someone takes the time to share the art of fishing with you, they are teaching you lessons that truly will stay with you a lifetime, the lessons of patience, self-sufficiency, tradition, camaraderie, hope, love & more, that really do make an impact for life.   This is why it was important for my husband to share his love & talent of fishing with our children. It  is what he holds most dear from the teachings of his Grandfather (Silas) and his Father. It’s much more than just feeding yourself fish, it is a gift, past down from generation to generation.  My husband and his brother still love to get together and go fishing whenever they can, it is a wonderful time to remember the love they were shown as children, and the passion it has created for them. Also to reminisce on the fishing trips with their kids, their parents, grandparents & friends. So if you get the chance; Take ‘Em Fishing!

Hushpuppies - Aunt Shirley's Recipe

  • 1 Cup Alberts Yellow Cornmeal
  • 1/2 cup Flour
  • 1 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Onion Powder
  • 1 tsp Old Bay
  • 3/4 Cup of Milk
  • 1 tsp Vinegar (Apple Cider)
  • 1 tbsp Sugar
  • 1/2 white onion (grated)
  • 1 egg
  • Chives or Green Onions
  • Vegetable Oil for frying at 350 degrees
  • 1/2 tsp Cayenne (Optional)

Gather your ingredients

Combine all dry ingredients & mix well.
Combine all dry & wet ingredients and mix well, use cookie scoop for perfect puppies.
Scoop dough into 350 degree oil and fry for about 3 - 4 minutes
Fry until golden brown, draining oil if it gets dirty.
Beautiful! cool on wire rack and let oil drain with paper towel underneath.
Our beautiful Aunt Shirley was an amazing cook, and she was the best at frying fish, chicken and hushpuppies!
