Pickled Red Onions
Sweet, Savory, Crunchy, Tangy, DELICOUS! All the trendy restaurants are elevating sandwiches and burgers these days with pickled red onions. Who knew they are so incredibly easy to make! And they add a wonderful surprise to your ordinary burger. I started making these a few months ago for my family, and now I have to keep a jar in the fridge weekly. They can’t get enough! Try them, you’ll love them, but be prepared to have to keep making them, because they will be requested.
Ingredients
- 5 Small Sweet Red Onions
- 16 oz Apple Cider Vinegar
- 5 Tablespoons White Sugar
- 2 Tablespoons Kosher Salt
- 3 Tablespoons peppercorns (optional)
- 4oz water
- 2 18 – 20 oz jars ( I use old pickle jars)
Clean and slice your red onions thin, put in colander and break up pieces while running under cold water for about 1 – 2 minutes.(this will make them not as pungent)
Next fill jars with onions and push them down to pack jars full.
Take boiling water from kettle and pour over raw onions in the jar, let sit for about a minute to blanch them to remove any bitter or strong taste. Drain the water and set onion filled jars aside.
Next add the vinegar, sugar, salt, peppercorns, and water to a small pot. Warm and mix until salt and sugar is dissolved (Does not need to boil)
Pour this mixture over the onions in the jars, let cool a little, then cover with lid and store in the refrigerator. They can be eaten in about an hour, but are best the next day. Can be stored in the fridge for about a week (if they last that long) lol.
Easy and delicious!
You can increase or decrease the sugar depending on how sweet or savory you like them. You could also use honey or agave to sweeten them instead of white sugar.
You could also flavor them with whole cloves of garlic, sprigs of rosemary or thyme, or peppercorns the way I have here.
